He once told the story of how his impetus to start down this road came when his gradma got liver cancer and it was assumed that she drank. He clarified that she was gluten intolerant, took the gluten out of her cupboards and she lived quite a while longer than expected. He also noted that gluten intolerance was considered a possible cause of her disease but that it wasn't considered important enough to look into.
